But I've n...I'm German and LOVE Senfgurken! But I've never heard of making them from overripe cucumbers; all the recipes I know use normal cucumbers. Anyway, here's the recipe I use. You don't need to drain the cucumbers at all, so you'll save time.<br />4 lbs cucumbers<br />500 ml white wine vinegar<br />500 ml water<br />500 g sugar (about 17 ounces)<br />1 TB mustard seeds<br />1 TB pickling spices<br />3 tsp salt<br />1 onion, thinly sliced<br />1 bunch dill, divided in sprigs<br />Peel and cut cucumbers lengthwise and remove seeds. Cut the cucumber halves in 1-2 inch chunks. Put the water, vinegar and spices in a pot and boil for 3 minutes. If you want firm pickles put the chunks in the jars and add the hot brine on top. If you want softer chunks cook the cucumbers with the brine. Then all of a sudden it felt like i had rum into a wasp nest. My whole right arm felt like I had venom running through it. I live in east/central KY, and have been stung by may things and this was as bad as anything and even worse cause it got me in about 6 different places. I didnt have a shirt on so I stopped the mower and rsn in the house. Not knowing what had happened i got a wet wash rag and washed my arm off. I was almost in tears. But it eased up and my son and I went outside to investigate. Sure enough on the right side of the mower I saw what I now know to be a pack saddle worm.. I instantly knew thats what had gotten me cause u could see the little red hairs and even though i had never seen or heard of them in my 31 years it just looked like something u would not want to touch. It isn't as hard as many people make it to be. The key to planting any plants, trees, veggies, etc. in clay soil is to mix it (50/50) with organic peat humus. I usually buy the 40lbs. at Lowes which normally runs less than $2/bag. <br /><br />I'm here because I'm going to try potatoes & sweet potatoes this year. The whole place was wonderfully funky. I'm pretty sure I met the same school teacher in Ruidosa, although I don't remember the old church. I might even have gotten up to Candelaria, and I remember drinking some sotol in a handmade clay bottle, stopped with wac and tied with string made from what looked like yucca fiber.<br /><br />Does Carlos Armendariz still have the hardware store in Presidio? Does Rose still run the restaurant at the corner by the highway? Her hubby was the local AC tech.
